3 T balsamic vinegar
1 1/2 T extra virgin olive oil

2 tsp fresh oregano, chopped (1 tsp dried if fresh isn’t available)
Kosher or sea salt
Freshly cracked black pepper
1 small eggplant
1 fennel bulb, trim the fronds (leaves)
2 small zucchini
1 head radicchio
1 red onion, peeled
2 T olive oil
